Eat more vegetables part I: simple soups

Lets be honest: January is a bad time for self-improvement. I would do better if my New Year’s resolutions could start in May when a jog in the forest is a lot less cold and muddy and bright spring greens at the market arouse thoughts of gorgeous salads. In the spirit of totally achievable resolutions for right now, here are two posts with easy, tasty, vegetable-based comfort foods.
