During my travels in India, I stayed a few days with the wealthy Indian aunt of a friend of mine. I will never forget sipping Indian-style tea, or chai, on her veranda while she complained that her cook could not make a proper Western-style cup of tea— he insisted on boiling the tea leaves, milk, and sugar all together! I did not dare to admit that I preferred the Indian way.

Ingredients
  • 1 c milk
  • 2 whole-leaf black teabags split open
  • 1 cinnamon stick
  • 4 whole cloves or 1/8 t ground clove
  • 1 t whole cardamom seeds or 1/8 t ground cardamom
  • a pinch of fresh ground black pepper
  • 2 T sugar
Instructions
  1. Add all ingredients to a small saucepan.
  2. Simmer on low heat for 8 minutes, stirring occasionally.
  3. Pass through a sieve or tea strainer to remove spices and tea leaves.
  4. Serve hot or cold.
