During my travels in India, I stayed a few days with the wealthy Indian aunt of a friend of mine. I will never forget sipping Indian-style tea, or chai, on her veranda while she complained that her cook could not make a proper Western-style cup of tea— he insisted on boiling the tea leaves, milk, and sugar all together! I did not dare to admit that I preferred the Indian way.

Ingredients
- 1 c milk
- 2 whole-leaf black teabags split open
- 1 cinnamon stick
- 4 whole cloves or 1/8 t ground clove
- 1 t whole cardamom seeds or 1/8 t ground cardamom
- a pinch of fresh ground black pepper
- 2 T sugar
Instructions

Add all ingredients to a small saucepan.

Simmer on low heat for 8 minutes, stirring occasionally.

Pass through a sieve or tea strainer to remove spices and tea leaves.

Serve hot or cold.
