I know this is not a fully proper tiramisu, but it really does capture the flavors. It is also so incredibly simple to make that I predict you'll be eating tiramisu at home much more often from now on.
- 1/4 c mascarpone
- 1 t milk
- 1 drop vanilla flavor
- 2 t sugar
- 2 lady finger cookies
- 2 T fresh brewed coffee
- a sprinkle of cocoa powder
Break lady finger cookies each into 2 pieces and place them in the bottom of a small bowl or ramekin.
Spoon coffee over top.
Mix the vanilla, sugar, and milk into the mascarpone. Spread over the lady fingers. Sprinkle with cocoa powder.
Refrigerate for at least 1 hour up to 1 day.
If you want coffee flavor but not caffiene, you can of course use decaf, but coffee liqueur (such as Tia Maria) is slightly more indulgent.
