MASCARPONE: Tiny tiramisu

I know this is not a fully proper tiramisu, but it really does capture the flavors. It is also so incredibly simple to make that I predict you'll be eating tiramisu at home much more often from now on.

Ingredients
  • 1/4 c mascarpone
  • 1 t milk
  • 1 drop vanilla flavor
  • 2 t sugar
  • 2 lady finger cookies
  • 2 T fresh brewed coffee
  • a sprinkle of cocoa powder
Instructions
  1. Break lady finger cookies each into 2 pieces and place them in the bottom of a small bowl or ramekin.
  2. Spoon coffee over top.
  3. Mix the vanilla, sugar, and milk into the mascarpone. Spread over the lady fingers. Sprinkle with cocoa powder.
  4. Refrigerate for at least 1 hour up to 1 day.
  5. Serve cold.
Recipe Notes

If you want coffee flavor but not caffiene, you can of course use decaf, but coffee liqueur (such as Tia Maria) is slightly more indulgent.
