
Tzatziki

Tzatziki is a delicious and relatively healthy dip, served in Greece with grilled meats. I also like it as a dip for bread. Use Greek yogurt for an authentic version.

Ingredients
- 1/2 c plain thick yoghurt
- 1/2 cucumber
- 1 cloves garlic finely chopped or pressed
- 2 t olive oil
- 1/4 t salt
Instructions

Peel and then cut the cucumber in half lengthwise and use a teaspoon to scrape out the seeds.

Use the large-holed side of a cheese grater to shred the cucumber. Collect the shreds in a sieve and sprinkle with salt. Allow to drain for at least 15 minutes. Press the cucumber shreds against the side of the sieve to squeeze out additional water.

Stir all ingredients together in a bowl and serve directly.
