SCRAMBLED EGG: Eggy fried rice

This comes pretty close to the typical Chinese restaurant fried rice. I am not going to take the leap to say it is authentic Chinese, but surely I can claim it is authentic Chinese-Amercian?

  • 2 scrambled or fried eggs
  • 1 T vegetable oil
  • 1/4 c frozen peas
  • 1 clove garlic
  • 1 c cooked rice
  • 1 T soy sauce
  1. Chop or slice the eggs into small pieces.
  2. Heat vegetable oil in skillet on medium heat. When hot, press garlic into pan and fry for 1 minute.
  3. Add frozen peas and stir fry for 2 minutes.
  4. Add rice and fry for 2 minutes.
  5. Add eggs and soy sauce and fry a further 2 minutes to heat through.
