Eggy fried rice
This comes pretty close to the typical Chinese restaurant fried rice. I am not going to take the leap to say it is authentic Chinese, but surely I can claim it is authentic Chinese-Amercian?
Course: Main Course, Side Dish
- 2 scrambled or fried eggs
- 1 T vegetable oil
- 1/4 c frozen peas
- 1 clove garlic
- 1 c cooked rice
- 1 T soy sauce
Chop or slice the eggs into small pieces.
Heat vegetable oil in skillet on medium heat. When hot, press garlic into pan and fry for 1 minute.
Add frozen peas and stir fry for 2 minutes.
Add rice and fry for 2 minutes.
Add eggs and soy sauce and fry a further 2 minutes to heat through.
