Opinions in our house differ on whether the Parmesan cheese adds to or detracts from the flavor of this salad. Consider it optional.

  • 1 ripe pear
  • 2 c arugula
  • 2 T pine nuts
  • 1/4 c shredded Parmesan cheese
  • 1/4 balsamic vinaigrette
  1. Roast pine nuts in a dry pan for 4 minutes at medium heat, shaking frequently.
  2. Tear arugula fine.
  3. Peel and dice pear.
  4. Toss all ingredients together and serve directly.
