Grilling peaches releases their juice and gives them an extra rich flavor. For variety also try grilling pineapple—-- just grill it a couple minutes longer.

  • 2-4 ripe peaches
  • 1 t vegetable oil
  • 1 t butter
  • 1/2 c mascarpone cheese
  • 2 T sugar
  • 1/4 t vanilla
  • pinch of cinnamon
  1. Heat the grill to high.
  2. Mix mascarpone with sugar and vanilla and set aside.
  3. Halve the peaches: cut around the diameter of the peach then twist gently to split the two halves. One half will have the pit; remove it with your fingers.
  4. Brush the peach halves with a bit of vegetable oil to prevent sticking on the grill.
  5. Place peaches cut side down on the hot grill and grill for 3-5 minutes until the whole peach is soft and the skin begins to pull away.
  6. Serve warm with mascarpone cheese and a sprinkle of cinnamon.
