KIWI: Tropical trifle

This dessert is more elegant than the effort would indicate. Multiply the recipe times four to fill a bowl for a picnic. It’s especially beautiful if you layer fruit around the sides of the bowl.

Ingredients
  • 1 kiwi
  • 1 slice pound cake
  • 1/2 mango
  • 1 banana
  • 3 ounces coconut pudding banana or even vanilla are acceptable substitutes
Instructions
  1. Cut pound cake into cubes of 1/4 inch square. Peel, quarter, then slice kiwis. Cut mango into blocks. Slice banana.
  2. Use a parfait glass. Layer, starting with pudding, then cake, then fruit. End with pudding and top with a small bit of fruit in the middle as decoration.
  3. Chill for at least 10 minutes to soften the cake, then serve.
Recipe Notes

Don’t wait until your kiwi is over-ripe to use it. Once a kiwi has become completely soft the flavor is too dominant.
