I heard that there is a restaurant in New York which is completely dedicated to grilled cheese sandwiches. A sceptic might say that is elevating the humble sandwich a bit far. I hereby submit this panini as evidence to the cause of grilled cheese as worthy cuisine.

Ingredients
- 2-4 sprigs of thyme
- 2 ounces young goat cheese
- 1 t honey
- 2 slices crusty white bread
Instructions

Remove the leaves from the thyme stalks.

Spread the goat cheese on one of the bread slices. Drizzle with honey and sprinkle with thyme leaves. Top with the other slice of bread and compress slightly.

Grill in a panini maker, or bake in the oven at 325F for about 6 minutes. If you bake the panini in the oven, weight it down with a heavy oven-proof skillet during baking.
