Parsley deserves to be so much more than the sprig that decorates your plate. Its bright clean flavor adds a fresh top note to many dishes. I like this salad because parsley is indisputably the star ingredient.

  • 1 T up to 1 c chopped curly or flat leaf parsley
  • arugula torn into small pieces to make a total 1 c of greens with parsley
  • 1 c cherry tomatoes halved
  • 1/2 c chopped cucumber
  • 1/2 c pita chips broken into 1/2 inch pieces
  • 3 T olive oil
  • 2 T lemon juice
  • 3 t salt
  1. Mix vegetables and pita chips in a salad bowl.
  2. Dress with olive oil, lemon juice, and a generous sprinkling of salt.
