Black bean salsa

This is a great use for just a few black beans. You can also add leftover black beans to ground beef for use in any kind of Mexican food.
- 1 T to 1/4 c black beans
- 1 c ripe tomatoes about 2 medium tomatoes
- 1/4 small onion
- 1 fresh jalepeño
- 1 t vegetable oil
- 1 T corn kernels
- 1 T cilantro
- juice of 1/2 lime
- 1/4 t salt or to taste
Chop tomatoes, onion and jalepeño fine. Remove leaves from cilantro stems and chop the leaves fine.
Heat 1 t vegetable oil in small saucepan over medium-high heat.
Add tomatoes, onion, jalepeño and corn. Cook, stirring, for 3 minutes.
Remove from heat and stir in cilantro, lime juice, and salt.
Chill for 1 hour up to 1 day to allow flavors to mix.
