This is a great use for just a few black beans. You can also add leftover black beans to ground beef for use in any kind of Mexican food.

Ingredients
  • 1 T to 1/4 c black beans
  • 1 c ripe tomatoes about 2 medium tomatoes
  • 1/4 small onion
  • 1 fresh jalepeño
  • 1 t vegetable oil
  • 1 T corn kernels
  • 1 T cilantro
  • juice of 1/2 lime
  • 1/4 t salt or to taste
Instructions
  1. Chop tomatoes, onion and jalepeño fine. Remove leaves from cilantro stems and chop the leaves fine.
  2. Heat 1 t vegetable oil in small saucepan over medium-high heat.
  3. Add tomatoes, onion, jalepeño and corn. Cook, stirring, for 3 minutes.
  4. Remove from heat and stir in cilantro, lime juice, and salt.
  5. Chill for 1 hour up to 1 day to allow flavors to mix.
