This is not one of those salads that you order because you are eating light and low-calorie. This is a salad for hungry people who want a substantial meal.

  • 2-4 slices cooked bacon crumbled
  • 1/2 or 1 whole cooked chicken breast or equivalent amount of rotisserie chicken
  • 2 c iceberg lettuce
  • 3 small tomatoes
  • 1/4 cucumber
  • 1/4 c shredded cheddar cheese
  • 1/4 croutons
  • ranch dressing
  1. Chop lettuce fine. Chop tomatoes in wedges. Peel the cucumber, cut it in half, then slice.
  2. Arrange lettuce on a plate. Drizzle with dressing.
  3. Distribute cherry tomatoes, cucumber, shredded cheese, bacon and croutons on top. Lay chicken in the middle.
  4. Serve with ranch dressing.
