Classic chicken salad
This recipe also works with apple in place of the grapes. The fruit prevents it from being too rich and adds a bit of crunch.
- /2 c cooked white-meat chicken
- 1/2 stalk of celery
- 5 seedless grapes
- 2 T mild onion diced
- 3 T mayonnaise
- 1/2 t dried thyme
- pinch of salt
- generous amount of fresh ground black pepper
Dice chicken fine. Dice celery stalk. Quarter the grapes.
Mix all ingredients in a bowl.
The flavors will mingle better if you chill for at least 30 minutes up to 4 hours, but if you are too hungry to wait you can also serve this directly.
Serve as a sandwich or on a bed of lettuce as a salad.
