This recipe also works with apple in place of the grapes. The fruit prevents it from being too rich and adds a bit of crunch.

  • /2 c cooked white-meat chicken
  • 1/2 stalk of celery
  • 5 seedless grapes
  • 2 T mild onion diced
  • 3 T mayonnaise
  • 1/2 t dried thyme
  • pinch of salt
  • generous amount of fresh ground black pepper
  1. Dice chicken fine. Dice celery stalk. Quarter the grapes.
  2. Mix all ingredients in a bowl.
  3. The flavors will mingle better if you chill for at least 30 minutes up to 4 hours, but if you are too hungry to wait you can also serve this directly.

Recipe Notes

Serve as a sandwich or on a bed of lettuce as a salad.
