The teriyaki noodles are delicious even without steak. For variety, you can try teriyaki salmon or tuna instead of steak.

Ingredients
  • up to 4 oz. steak thinly sliced
  • 3 T teriyaki sauce
  • 1 T soy sauce
  • 1 t chili paste
  • 1 t sesame oil
  • 3 oz soba noodles or spaghetti
  • 3 green onions
  • 2 garlic cloves
  • 1/4 c carrot chopped very fine
  • 1/2 c bean sprouts
  • 1 T sesame oil
  • 1 T + 1 t vegetable oil
Instructions
  1. Stir together teriyaki sauce, soy sauce, chili paste, and 1 t sesame oil in a small bowl. Set aside.
  2. Make sure carrot is chopped fine— ideally in blocks about the size of a pea. Chop green onions using all white and light green parts. Chop garlic coarsely.
  3. Set noodles to cook according to package instructions.
  4. Heat sesame oil and vegetable oil together in large frying pan over medium-low heat. Add carrot and fry for 4 minutes or until carrots start to soften.

  5. Reserve 1 t of green onions for later. Add the rest of the green onions and garlic to the frying pan and fry 1 minute.
  6. Add bean sprouts and fry 2 minutes more, of until the bean sprouts are soft.

  7. Drain noodles very well. Add noodles and sauce to pan with vegetables and stir to mix.
  8. Remove noodle mixture from pan to plate and cover to keep warm.
  9. If you want to warm up the steak, add 1 t vegetable oil to pan and turn heat to high. Add steak slices to pan briefly (less than 10 seconds, you don’t want to overcook the steak!).
  10. Arrange steak slices over noodles and serve.
