You can easily make a syrup of cola by boiling off the water. It loses some of the vanilla flavor, so I stir vanilla back in at the end to rebalance the flavor.
Course: Basic technique, Dessert
- 1 can 12 oz cola
- 1/2 t vanilla aroma
Heat cola over medium-high heat in a small saucepan to a rolling boil.
Let the cola boil undisturbed until it reduces by half.
After that, stay close and stir regularly with a wooden spoon until cola is thick enough to coat spoon and about 1/4 c liquid remains.
Stir in vanilla aroma.
Pour into small glass jar and store at room temperature.
Careful not to over-reduce the cola or it will scorch!
