Easy pea curry
If you have a well-stocked freezer with frozen peas and frozen cocktail shrimp, you can always have the ingredients for this quick and elegant dinner on-hand.
Course: Main Course, Side Dish
- 1 c coconut milk
- 1 t butter
- 2 t curry powder
- 1/2 t cumin
- 1/4 c chicken or vegetable broth
- 1 c frozen peas
- 1 t sugar
- optional: 1 c cooked cocktail shrimp peeled and deveined
Heat butter in small frying pan over medium heat.
Add curry and cumin and fry 20 s to release aromas.
Add coconut milk, broth, peas, and sugar. Simmer 3 minutes.
If desired add shrimp.
Simmer 7 minutes more.
Serve with rice.
