If you have a well-stocked freezer with frozen peas and frozen cocktail shrimp, you can always have the ingredients for this quick and elegant dinner on-hand.

  • 1 c coconut milk
  • 1 t butter
  • 2 t curry powder
  • 1/2 t cumin
  • 1/4 c chicken or vegetable broth
  • 1 c frozen peas
  • 1 t sugar
  • optional: 1 c cooked cocktail shrimp peeled and deveined
  1. Heat butter in small frying pan over medium heat.
  2. Add curry and cumin and fry 20 s to release aromas.
  3. Add coconut milk, broth, peas, and sugar. Simmer 3 minutes.
  4. If desired add shrimp.
  5. Simmer 7 minutes more.

Serve with rice.
