PEANUT BUTTER: Peanut sauce

Here in the Netherlands, it’ is hard to tell whether chicken with peanut sauce is an Indonesian dish or a Dutch dish. The concept definitely started as Indonesian, but like English chicken curry or American spaghetti with meatballs, it seems to have wandered far enough from the original to be a thing of its own.

Ingredients
  • 1/4 c peanut butter
  • 1 t vegetable oil
  • 1 large clove garlic
  • 1 T ginger
  • 1/4 c coconut milk
  • 2 T soy sauce
  • 1 t chili paste
  • 2 T brown sugar
  • 1/4 c water
Instructions
  1. Chop or grate ginger fine. Press garlic.
  2. Heat vegetable oil in a small saucepan over medium-low heat.
  3. Add garlic and ginger and fry 2 minutes.
  4. Add peanut butter and smash into oil.
  5. Add coconut milk slowly, stirring continuously to blend.
  6. Add rest of ingredients and heat, stirring, at least 2 minutes until smooth and well mixed.
Recipe Notes

For a traditional meal, serve with chicken skewers and Indonesian fried rice (nasi).
