Here in the Netherlands, it’ is hard to tell whether chicken with peanut sauce is an Indonesian dish or a Dutch dish. The concept definitely started as Indonesian, but like English chicken curry or American spaghetti with meatballs, it seems to have wandered far enough from the original to be a thing of its own.
- 1/4 c peanut butter
- 1 t vegetable oil
- 1 large clove garlic
- 1 T ginger
- 1/4 c coconut milk
- 2 T soy sauce
- 1 t chili paste
- 2 T brown sugar
- 1/4 c water
Chop or grate ginger fine. Press garlic.
Heat vegetable oil in a small saucepan over medium-low heat.
Add garlic and ginger and fry 2 minutes.
Add peanut butter and smash into oil.
Add coconut milk slowly, stirring continuously to blend.
Add rest of ingredients and heat, stirring, at least 2 minutes until smooth and well mixed.
For a traditional meal, serve with chicken skewers and Indonesian fried rice (nasi).
