You can easily freeze leftover coconut milk and thaw it for use later. But I'd much rather have a good excuse to enjoy a cocktail!

Ingredients
- 1/3 c coconut milk
- 1 c ice
- 1/2 c pineapple juice
- 1 T brown sugar
- 1/4 c coconut rum
- optional for serving: 1 wedge of fresh pineapple
Instructions

Blend all ingredients together in an ice-crushing blender.

Serve with a wedge of fresh pineapple.

The virgin version (without rum) is tasty too!
