You can easily freeze leftover coconut milk and thaw it for use later. But I'd much rather have a good excuse to enjoy a cocktail!

Ingredients
  • 1/3 c coconut milk
  • 1 c ice
  • 1/2 c pineapple juice
  • 1 T brown sugar
  • 1/4 c coconut rum
  • optional for serving: 1 wedge of fresh pineapple
Instructions
  1. Blend all ingredients together in an ice-crushing blender.
  2. Serve with a wedge of fresh pineapple.

The virgin version (without rum) is tasty too!
