GRAND MARNIER: Raspberry tiramisu

Mascarpone cheese is absolutely delicious in desserts and as versatile as whipped cream. This recipe is modeled after my tiny tiramisu, but swaps out fruit for the traditional coffee.

Ingredients
  • 2 T Grand Marnier
  • 16 fresh raspberries or 2 fresh and 14 frozen
  • 2 lady finger cookies
  • 1/4 c mascarpone
  • 1 T milk
  • 2 t sugar
  • pinch cinnamon
Instructions
  1. f using frozen raspberries, thaw them first. Then puree the 14 raspberries in a small food processor or blender. Press the puree through a small sieve to eliminate seeds, collecting the pressed liquid into a bowl.
  2. Break lady finger cookies each into 2 pieces and place them in the bottom of a small ramekin.
  3. Spoon raspberry puree over top of the cookies.
  4. Mix the Grand Marnier, milk, and sugar into the mascarpone. Spread over the lady fingers.

  5. Refrigerate for 1 hour.
  6. Top with two fresh raspberries and pinch of cinnamon as decoration.

  7. Serve cold.
Recipe Notes

This recipe works equally well with blackberries or strawberries.
