Arugula walnut pesto
This is one of those dinners you can create seemingly from nothing. You might already have most of the ingredients in stock and this goes from idea to table in under 15 minutes.
Course: Main Course
- 4 oz arugula
- 1/2 c walnuts
- 2 cloves garlic
- 1/2 c grated parmesan cheese
- 1/3 c olive oil
- 400 g dry spaghetti noodles
- salt & pepper to taste
Cook spaghetti according to directions on package.
While the spaghetti cooks, toast walnuts in a dry frying pan for 5 minutes over medium heat, shaking regularly to prevent scorching. Let cool slightly.
Add arugula, walnuts, garlic, cheese, and oil to a small food processor. Process until mixed and smooth. Taste, and add salt & pepper as desired.
When spaghetti is ready, drain and toss with sauce. Serve directly.
