Easy indulgent chocolate mousse
I know you feel sceptical when reading this. You think you will taste the avocado, but believe me, you won't!
- 1 very ripe avocado
- 1/2 c whipping cream chilled
- 1/4 c sugar
- 1 t vanilla
- 1/3 c butter melted
- 1/4 c unsweetened cocoa powder
Puree together the avocado, butter, and cocoa powder in a small food processor until completely smooth.
Add sugar and vanilla to cream in a large bowl. Whip the cream mixture until firm peaks form.
Fold whipped cream in the avocado-cocoa mixture.
Serve directly or chill for up to 1/2 hour.
