Until you try it, roasted cauliflower sounds a bit strange. Once you've had it, you'll understand. The cauliflower tastes surprisingly nutty and mild this way.

Ingredients
- 1/2 head of cauliflower
- 3 T olive oil
- salt
Instructions

Preheat oven to 400F.

Chop cauliflower into florets of between 1 and 1 1/2 inch.

Toss with olive oil and salt generously. Spread cauliflower in a single layer on a baking sheet.

Roast for 15 minutes, then check for color every 3 minutes. The cauliflower is done when most pieces are golden brown and turning dark brown at the edges.
