Until you try it, roasted cauliflower sounds a bit strange. Once you've had it, you'll understand. The cauliflower tastes surprisingly nutty and mild this way.

  • 1/2 head of cauliflower
  • 3 T olive oil
  • salt
  1. Preheat oven to 400F.
  2. Chop cauliflower into florets of between 1 and 1 1/2 inch.
  3. Toss with olive oil and salt generously. Spread cauliflower in a single layer on a baking sheet.
  4. Roast for 15 minutes, then check for color every 3 minutes. The cauliflower is done when most pieces are golden brown and turning dark brown at the edges.
  5. Serve directly.
