Roasted pepper salad with feta dressing
This salad is creamier and deeper in flavor than it has a right to be, considering the simplicity of the ingredients.
- 2 bell peppers roasted
- 1/4 head Bibb lettuce
- 2 T garlic croutons
- Freshly ground black pepper
- For dressing:
- 2 T feta cheese
- 1 t lemon juice
- 2 T olive oil
- 1/2 t dried oregano
Make the dressing by blending all dressing ingredients in small food processor or blender.
Tear the lettuce small.
Toss lettuce with dressing then divide onto small places.
Slice peppers into strips and pile on top of lettuce.
Sprinkle croutons and grind fresh black pepper over the top.
