Let your tomatoes get good and brown when roasting them for this recipe. The smoky richness of well-roasted tomatoes is perfect for salsa.

  • 1 c roasted tomatoes
  • 1/2 small red onion
  • 2 spring onions
  • 1 fresh jalapeno pepper
  • 1/4 t salt
  1. Add onions and jalapeno to a small food processor. Pulse until fine.
  2. Add tomatoes and salt, then pulse another 4-6 times to chop tomatoes.
  3. Adjust salt to taste.
Recipe Notes

Best if stored 2 hours or longer before using, to give the flavors time to blend.
