Roasted tomato salsa
Let your tomatoes get good and brown when roasting them for this recipe. The smoky richness of well-roasted tomatoes is perfect for salsa.
- 1 c roasted tomatoes
- 1/2 small red onion
- 2 spring onions
- 1 fresh jalapeno pepper
- 1/4 t salt
Add onions and jalapeno to a small food processor. Pulse until fine.
Add tomatoes and salt, then pulse another 4-6 times to chop tomatoes.
Adjust salt to taste.
Best if stored 2 hours or longer before using, to give the flavors time to blend.
