If you have very ripe tomatoes about to pass their peak, roasting them is a great way to capture their peak flavor but give you some extra time to use them.

Ingredients
  • any number of ripe tomatoes
Instructions
  1. Preheat oven to 425F.
  2. Cut tomatoes in half.
  3. Lay, skin sides up, in a single layer on baking sheet.
  4. Roast 25 minutes.
  5. Remove from oven and let cool.
  6. Pull off skins with your fingers.
  7. Can be stored up to 1 week in an air-tight container in the refrigerator.
