If you have very ripe tomatoes about to pass their peak, roasting them is a great way to capture their peak flavor but give you some extra time to use them.

Ingredients
- any number of ripe tomatoes
Instructions

Preheat oven to 425F.

Cut tomatoes in half.

Lay, skin sides up, in a single layer on baking sheet.

Roast 25 minutes.

Remove from oven and let cool.

Pull off skins with your fingers.

Can be stored up to 1 week in an air-tight container in the refrigerator.
