
Stir-fried broccoli stem

Why did it take me 40 years to find out that broccoli stems are delicious? As it turns out, I like them even better than broccoli! The stems have a mild asparagus-like flavor with a less-fibrous texture. You can use them anywhere you might use green asparagus, and cook them similarly.

Ingredients
- stems from 2 heads of broccoli
- 1 T butter
- 1 T olive oil
- 1 clove garlic in slices
- 1 T soy sauce
- 1 T water
- medium-size frying pan which can be covered tightly with a lid

Peel the broccoli stems and cut them into rectangular sticks of about 1 inch by 1/4 inch. Some will be irrgularly shaped, that's fine. Slice the garlic if you haven't done so.

Melt the butter and olive oil together in a medium-sized frying pan over medium-high heat.

When butter is melted, add the broccoli stems and stir-fry for 3 minutes until starting to brown. Add garlic and stir-fry 30 seconds more.

Turn heat down to medium, add soy sauce and water, then quickly cover the frying pan with a lid. Steam the broccoli stem this way for 4-6 minutes, until the stems are tender but not soft.

Serve directly.
