Sweet and sour cucumber salad
This cool salad makes a great accompaniment to spicy foods.
Course: Side Dish
- 1 cucumber
- 1 t salt
- 1/2 small red onion
- 1/4 cup heavy cream or half-and-half
- 2 t white wine vinegar
- 2 t fine crystalline sugar
Peel and slice cucumber fine. Place cucumber slices in sieve, sprinkle with salt, and allow to drain for at least 15 minutes.
Chop the onion into thin half rings.
Mix the cream, vinegar, and sugar in a small bowl, stirring until sugar is dissolved.
When cucumbers are ready, mix all ingredients together in a bowl and serve directly.
