I always try to smuggle a few extra bites of veggies into the kid-favorites by browning bell pepper or corn along with ground beef. You can use any mixture of the vegetables mentioned below for about a total of 1 1/2 cup veggies.

  • 2 T up to 1/2 cup corn kernels
  • 2 t vegetable oil
  • 1 lb ground beef
  • 1 small onion
  • 1/2 red or green bell pepper
  • 1 small carrot
  • 1 c ketchup
  • 2 T brown sugar
  • 2 t mustard
  • 8 white rolls sliced in half
  1. Dice onion, red bell pepper, and carrots very small.
  2. Heat vegetable oil in non-stick pan over medium-high heat.
  3. When hot, add the chopped vegetables and cook, stirring regularly, until soft and tender, about 5 minutes.
  4. Add corn and ground beef. Cook, stirring regularly, until beef is fully browned.
  5. Add ketchup, sugar, and mustard. Turn heat to medium-low and simmer 3 minutes.
  6. Serve on white rolls.
