Veggie-stuffed sloppy joes
I always try to smuggle a few extra bites of veggies into the kid-favorites by browning bell pepper or corn along with ground beef. You can use any mixture of the vegetables mentioned below for about a total of 1 1/2 cup veggies.

- 2 T up to 1/2 cup corn kernels
- 2 t vegetable oil
- 1 lb ground beef
- 1 small onion
- 1/2 red or green bell pepper
- 1 small carrot
- 1 c ketchup
- 2 T brown sugar
- 2 t mustard
- 8 white rolls sliced in half
Dice onion, red bell pepper, and carrots very small.
Heat vegetable oil in non-stick pan over medium-high heat.
When hot, add the chopped vegetables and cook, stirring regularly, until soft and tender, about 5 minutes.
Add corn and ground beef. Cook, stirring regularly, until beef is fully browned.
Add ketchup, sugar, and mustard. Turn heat to medium-low and simmer 3 minutes.
Serve on white rolls.
