To make perfectly smooth hummus, you need to remove the chickpea hulls. You can do so by boiling the chickpeas 3 minutes in water with 1/2 t baking soda. Pour off the water then add cold water over the top. Rub the chickpeas vigorously and skim the released hulls off the top. You can also make perfectly yummy hummus without removing the hulls, but the texture will be a bit coarser.

Ingredients
1/2can5 oz chickpeas (cooked or from a can)
1Ttahini
2oil-packed sun-dried tomatoes
juice of 1/2 lemon
1small garlic clove
salt to taste
1Tolive oil
optional: 1/4 t sumac
Instructions
Add all ingredients to small food processor. Process until smooth.
Spread hummus on shallow dish and drizzle with olive oil.
Sprinkle with sumac if desired.
Serve with pita bread or pita chips.
