This is my variation of a technique I first encountered in the New York Times. I'm a lazy (efficient?) cook, so I simplified and adapted to ingredients that I always have on hand. The honey balances the intense saltiness of the heated feta and adds a caramel note when baked.
1/2or up to 2 whole blocks feta cheese
per 1/2 feta block:
Preheat the oven to 350 F.
Line an oven dish with baking paper.
Dry feta cheese with paper towels, then rub with olive oil.
Mix honey with hot water. Add thyme to honey mixture. Pour mixture over the top of the feta.
